Working Together to Improve the Quality of Life of Nicaraguans

Adio! In 2005 I spent about twelve days in Nicaragua - partly in Granada and partly assisting in the construction of a community kitchen in a very rural village. This week on Food Network here in the USA, the show Bizarre Foods profiled Nicaragua and I was instantly transported back to my own experiences in-country.

I would like to explore starting a restaurant in Portland Oregon USA that focuses on the cuisine of Nicaragua. I have contacted the proprietress of Domatilla Ecological Reserve in Nicaragua to seek her opinion, but would like input from this network.

Ideas or comments, anyone? Does anyone know any of the professional chefs in Nicaragua?
